pearl of the Mediterranean.
With each civilization its
tree of wisdom.
With Chinese, the k'ongsang, crowned mulberry tree,
with the Scandinavians, of course the Yggdrasil ash
and with Tunisian, the olive-tree.
Fond of delicacies tree the "of rebellious grounds"
sung by Virgile brings through the country its
enchanting flavours.
For the traveller who crosses the neighbouring grounds, the
olive-tree will be this eternal tree which points out the dove of Noah
to him, the wisdom of Athéna, the garden of Jerusalem.

It should be said that the olive-tree is a tree to which Mediterranean
climate, Tunisian in first, is appropriate perfectly : soft winters, rainy
autumns or springs, summer heats and dry, great luminosity.
In Tunisia, country of olive, par excellence, the thousand-year-old tree
marks out the landscape and makes its reputation.
In time, the women called olives " the black pearls ". The olive-trees were the sure
value in which one invested his saving. Tunisian exchanged the jewels
and their dowries against these trees which were for them an insurance
on the future and the image of a certain independence.
Olive oil remedy of yesterday and
today.

all the evils" says an old proverb, already at the 5th century
before Christ, Hippocrates recommended it against the aches or to look after the
ulcers or the cholera. Our ancestors employed oil to treat the
constipations. They also used it like softener of the skin and the
hair, against the nettles, for the massages of the babies or the
processing of asthma. This empirical medicine has from now on
scientific bases. The doctors are formal, oil prevents the
cardiovascular diseases. Composed mainly of oleic acid and linoleic
acid in variable proportion according to the area of origin, the
Tunisian olive oils are the source of the most adapted fat content
to the metabolism of the human body.
It
is the best edible fats : it decreases by half the coronary diseases.
Second advantage, it is rich of vitamin A, D and E, essential
catalysts for the growth of the children, and their resistance to the
infections, the ossification and of the muscular activity, in
particular that of heart.
Pleasure
of the palate, as well for the heart this oil is to be used
"without" moderation.
