The island of
Djerba, an oasis surrounded by the Mediterranean, is
marked out by olive-trees, along the road which carries to Houmt Essouk
to Kentara- Borj-Agir, one discovers a thousand years old olive-trees,
with tormented trunks tied, burst,
some are old more than 2000 years dating from the Roman
time. The exceptional climate of the island of Djerba gives rise to a
variety of olives whose oil has special and single gustatory and dietetic qualities. Its contrasted, fruity savour, soft, prickly, with the cut
grass or almond taste, has made its reputation universal.
